Ian's parents met while they were both working at a diner, and he got his start in restaurants 30 years later working at a diner in Buffalo. He started bartending while he was in college in Boston, met his wife at a restaurant where they both worked, and kept making drinks after moving to Brooklyn. He was a bar captain at The Cannibal in Manhattan before joining the Reynard bar team and eventually became the bar director for the hotel.
